Healthy Cake Batter Popsicles

Healthy Cake Batter Popsicles that are loaded with hidden veggies even the pickiest of eaters won't notice! With dairy free options as well!

Servings 6

Ingredients

  • 2 cups frozen chunked zucchini
  • 1 cup frozen banana chunks
  • 1/2 cup cream preferably raw or coconut cream for dairy free
  • 1/2 cup milk preferably raw or coconut milk for dairy free
  • 1/2 cup maple syrup
  • 1/4 cup grassfed collagen
  • 3 tbsp cashew butter
  • 1/3 cup dye free sprinkles

Instructions

  1. Place frozen zucchini and banana in a food processor with the regular S blade and puree until mostly smooth.
  2. Add cream, milk, maple syrup, gelatin and cashew butter and process until very smooth.
  3. Stir in sprinkles.
  4. For ultra creamy smooth texture, press mixture through a fine mesh sieve into a bowl.
  5. Fill popsicle molds, place lids and sticks on top and freeze until firm, about 4 hours or so.
  6. When ready, run popsicle molds under warm water for just a few seconds and then pull the popsicle out. Enjoy!
