Awesome Grain Free Waffles
I feel like waffles are kind of polarizing. Like you either love waffles OR pancakes but you’re not allowed to have both as a favorite.
However I’m here to say you CAN love both.
And you’ll certainly love these awesome Grain Free Waffles!
I like the simplicity of pancakes but man, a good waffle is such an indulgence. Crispy on the outside, soft and “bread-y” on the inside. These Grain Free Waffles are just that.
These Grain Free waffles are so good that no one would even know they are grain free! My somewhat picky eater (picky with grain free “bread” products that is) LOVES these.
Not grain free and want to make some great bread?? Check this out!
You can even use them to make savory sandwiches! Or PB&J sandwiches. Top them with the traditional grass fed butter and maple syrup or go wild and top them with jam. What about a savory waffle? Bacon, eggs, and fresh tomato with a drizzle of peppery mayo?? Mmmm…
Make EXTRA!
We keep extras stashed in the freezer for easy meals or on the go food. You just freeze them with parchment between each waffle placed in a freezer bag. Then when you need one take it straight from the freezer to the toaster or toaster oven. Works perfect!
I’ve use them for a quick sandwich when heading out the door with some turkey, cheese, and mayo. Or for an easy no fuss breakfast served with syrup and butter.
My favorite waffle iron…
I LOVE my non-toxic cast iron waffle maker for these.
We like our waffles normal, as in not Belgian style so this cast iron waffle maker is perfect. Plus you can use it camping if wanted since it is cast iron. It is also really affordable and if you have a large family I would suggest getting two so that the cooking process goes that much faster.
If you only have a Belgian style waffle maker (the thicker, deep waffle maker) then you’ll probably yield less waffles. They’ll still be delicious! You just might need to make more batter to feed more people.
Awesome Grain Free Waffles
Yield: approximately 8
Ingredients:
- 2 cups almond flour
- 2 cups tapioca flour
- 4 tbsp coconut flour
- 3 tsp baking powder
- 1/2 tsp salt
- 4 eggs
- 1/2 cup avocado oil or melted coconut oil
- 2 tsp apple cider vinegar
- 2 cups milk (I use raw cow milk but almond, coconut etc will work)
Instructions:
- Whisk the first 5 ingredients together in a medium bowl.
- Next separate the eggs putting the whites in another medium bowl and the yolks into the dry ingredients.
- Add the last three ingredients to the dry ingredients and yolks. Mix thoroughly.
- Then whip the egg whites until soft peaks form. Gently fold them into the rest of the batter until there are just a few streaks of white throughout.
- Oil and preheat your waffle iron. Once preheated add a ladle full or about a half cup of batter to the iron.
- Cook until browned on each side the remove a plate. Repeat until all the batter is used up!
- Enjoy warm and buttery!
