These Healthy Cake Batter Popsicles were created for three reasons. The first reason being an abundance of zucchini in the garden, the second being a way to get said zucchini into a very picky 3 year old, and lastly because my daughter is going through a serious sprinkle phase.  Along with a makeup and dress phase-is it some rite of passage as a girl mom??? This recipe isn’t like true “cake batter” recipes, it does have a slight banana taste and no icky box mixes but what else do I call it if it has sprinkles???

Even though it doesn’t have the artificial flavors of the box mix it is just as yummy.  My picky eaters who can smell a veggie from a mile away INHALED these popsicles.

Maybe we should just start tossing sprinkles on broccoli…

Or maybe they are just THAT good.

The recipe includes:

  • Veggies! Two whole cups of zucchini in fact.
  • Healthy fats from raw milk and cream or coconut milk and cream if dairy free is your thing.
  • Grass Fed collagen which offers a whole gamut of nourishment such as joint, skin and nail health plus a source of protein.
  • Natural sweetness and minerals from Maple Syrup– did you know maple syrup contains up to 24 different antioxidants?? (source)
  • And more good fats from the cashew butter, we love our fats around here.
  • PLUS dye free sprinkles! These aren’t a health food by any means but they are a fun occasional treat without the negative effects of dye (see this post if you are wondering why I avoid dyes.)

You’ll need a food processor or high power blender for this recipe.  This is the one that we use and love.  I use it for all sorts of things such as making sourdough tortilla dough, chopping, slicing and dicing veggies, making cultured butter, and so much more.  It’s an indispensable workhorse in our kitchen.

You will also need popsicle molds of course. We love these ones because they are stainless steel (i.e non-toxic, if you want a good read about why you should ditch plastic for good check this out) and zero waste because they come with reusable popsicle sticks.

After you acquire the equipment needed to make these, it’s as simple as blending all the ingredients together, pressing through a fine mesh sieve and then freezing! Getting veggies into your child has never been made easier 😉

 

Healthy Cake Batter Popsicles

Ingredients

2 cups frozen chunked zucchini

1 cup frozen banana chunks

1/2 cup cream, preferably raw or coconut cream for dairy free

1/2 cup milk, preferably raw or coconut milk for dairy free

1/2 cup maple syrup

1/4 cup grassfed collagen

3 tbsp cashew butter

1/3 cup dye free sprinkles

Instructions

  1. Place frozen zucchini and banana in a food processor with the regular S blade and puree until mostly smooth.
  2. Add cream, milk, maple syrup, gelatin and cashew butter and process until very smooth.
  3. Stir in sprinkles.
  4. For ultra creamy smooth texture, press mixture through a fine mesh sieve into a bowl.
  5. Fill popsicle molds, place lids and sticks on top and freeze until firm, about 4 hours or so.
  6. When ready, run popsicle molds under warm water for just a few seconds and then pull the popsicle out. Enjoy!
