Super Simple Shepherds Pie

This simple shepherds pie was born of a craving for minimalism.

This craving has been in the works for some time but is really starting to spread to my cooking style lately.

I want to make wholesome, delicious food with as few ingredients as possible. I don’t want to have to stock a bunch of specialty items in my pantry to only use them three times a year. I want staples and the know-how to make delicious variations with these staples that we keep coming back to over and over again.

Like this Super Simple Shepherds Pie.

This is our go-to shepherds pie recipe. It comes together in 30 minutes or less, uses 2 pans, and is minimal ingredients but big on flavor.

I’m also becoming more and more passionate about food that I can source locally OR grow at home.  There is just something intangibly special about being able to shake your farmers hand or harvest for yourself the food you eat.

I highly encourage you, if you don’t already, to seek out a local farmers market and see how much you find there.  Get to know your local farmers, ask questions, thank them and purchase from them as often as possible.  If you can’t do that but can grow a garden then that’s even better!!

God meant for us to be in community and to support one another.  Just as He designed the seasons and the food available for those seasons to nourish our bodies properly for the season needed.  Not that we don’t preserve and eat a little out of season but most of what we eat is seasonal fresh ingredients.

Now for this recipe we use home canned diced tomatoes but you can definitely use store bought! We also purchase all of our meat from our market and local farmers but again use what you can 🙂

Also, we are on a Whole30 now but I’ll make notes on how you can sub for other non-Whole30 ingredients.

Super Simple Shepherds Pie

Ingredients:

  • 1lb ground beef
  • 3 cups of vegetables (you can use frozen mixed or fresh or canned and drained, use whatever is in season or suits your fancy!)
  • 1 pint diced tomatoes (16oz)
  • 1 1/2 tbsp Dried Rosemary or Thyme (we love both but I think the Rosemary is my fave)
  • Salt & Pepper to Taste
  • 4 large potatoes or the equivalent, chopped
  • 3/4 Cup Coconut Milk (or any other milk)

Instructions:

  1. Brown the beef in an ovenproof skillet. Boil the potatoes in water until fork tender.
  2. Add vegetables, diced tomatoes, rosemary or thyme, salt and pepper to the beef. Cook until vegetables are tender and tomatoes have thickened into a sauce.
  3. Drain potatoes once fork tender.  Add coconut milk and mash or blend.
  4. Top the beef mixture with the mashed potatoes, spreading around so there is an even layer.
  5. Broil on High for 2-3 minutes or until the potatoes just start to brown.

Less than 30 minutes, 7 ingredients, 2 pans, 1 delicious easy allergy friendly meal! This Simple Shepherds Pie is sure to be a family favorite comfort food. 

Servings 4 people

Ingredients

  • 1 lb ground beef
  • 3 cups of vegatables you can use frozen mixed or fresh or canned and drained, use whatever is in season or suits your fancy!
  • 1 pint diced tomatoes 16oz
  • 1 1/2 tbsp Dried Rosemary or Thyme we love both but I think the Rosemary is my fave
  • Salt & Pepper to Taste
  • 4 large potatoes or the equivalent chopped
  • 3/4 Cup Coconut Milk or any other milk
